On Saturday, August 24th, 2019 we will start the evening with cocktails, like home made Sangria and a batch of Mr. Murray’s famous and notorious (there is a story there) Drop Your Pants Margaritas. We will also have Michiladas, also know as a red beer, with ingrediaents we import from the border.   There will be other offerings in a bar tended my Mr. Zuydhoek.  You will be served appetizers of Mr. Murrays long perfected pico de gallo and home made salsa, along with some of Mrs. Murrays incredible Guacamole,  chorizo bean dip and chips. The next course will be a shrimp Ceviche, imagine a Mexican shrimp slaw that you can eat stand alone or on chips. For the main course we will prepare Carnitas en Chile Verde.  Pork shoulder slow, cooked in a green Chile sauce until it is so tender it falls off the bone, then it is pulled apart and braised on a disco, a giant Mexican wok, until it has crispy ends and pieces.  Meanwhile the green sauce is reduced to a thick gravy.  Mr. Murray has cooked this multiple times for the Scoutmasters and it is a true favorite. Fresh, corn and flour tortillas will be prepared hot and on demand. Mrs. Murray will prepare  a pan of queso fresco Enchiladas, using her mothers classic sauce recipe as a no meat option. The above will be served with Grandma Soylas Frijoles Borrachos, (drunk beans) that have to cook for at least 24 hours and I will try to recreate her “lap it up rice.”  The best Mexican rice you have ever had. We will finish with multiple options for desert, ranging from Mexican pastries, to make in front of you Bunuelos (fried tortillas with cinnamon sugar).
